Dairy is moving well beyond protein and digestive health. Nestlé is exploring HMO combinations designed to influence gut-brain pathways linked to stress and mood in children. DSM-firmenich is expanding its HMO portfolio across Asian markets. Meiji is already selling yogurt positioned around skin protection and moisture, while other dairy innovations are targeting oral health, immunity, and healthy aging.

Meanwhile, sustainability is creating an entirely different set of R&D decisions. Feed additives such as Bovaer are already being deployed. More experimental approaches include methane-destroying barn systems and selective breeding for naturally lower-emitting cattle.

The question heading into 2027 is which of these technologies are ready for product development now, which deserve early R&D investment, and which are better accessed through suppliers, licensing, or partnerships. Our Dairy Trends 2027 report will help you answer that.

What’s inside the report?

  1. How are dairy companies engineering high-protein formats for the GLP-1 era?
See how Lactalis, Bright Dairy, Danone, and others are increasing protein while managing texture, sweetness, viscosity, and nutrient density.
  2. Where does the HMO and gut-brain race stand?
Track how Nestlé, Danone, Arla, Yili, and other players are approaching HMOs, lactoferrin, and other bioactives across infant and functional nutrition.
  3. How are dairy and plant-based players solving taste and functionality gaps?
Examine how Nestlé, Danone, Mengniu, PlanetDairy, and others are working on creaminess, viscosity, melt, and off-notes, and why earlier launches such as the UK’s Smug range struggled.
  4. Which precision-fermentation companies are closest to commercial scale?
Compare Vivici, Perfect Day, Standing Ovation, and others across production scale, regulatory status, partnerships, and cost barriers.
  5. Which methane-reduction technologies are ready to deploy, pilot, or monitor?
Compare feed additives, seaweed-based approaches, methane capture, barn-air treatment, and selective breeding.
  6. Which emerging companies could become future partners, suppliers, or acquisition targets?
Track startups working on molecular farming, precision-fermented whey, human milk proteins, programmable lipids, and other enabling technologies.

Identify what to reformulate now, where early R&D investment could create an advantage, and where partnerships may offer a faster route than building the capability internally.
